Italian Grandma Makes Baccala with Potatoes and Mushrooms (Dried & Salted Cod Fish)

Baccala with Potatoes and Mushrooms (Dried & Salted Cod Fish):
Olive Oil
1 medium Yellow Onion, chopped
3 cloves Garlic, minced
16 ounces Mushrooms, sliced
Salt & Black Pepper, to taste
Hot Red Pepper Flakes, to taste
5 medium Russet Potatoes, large cubes
2 cups Peeled Tomatoes
Water (enough to cover fish)
2-3 pounds Baccala (dry weight), cut into serving portion sizes
1 ½ cups All Purpose Flour
½ – 1 cup pitted Green Olives, sliced in half
½ cup Fennel Fronds
Serve with crusty Italian Bread!
